Small and delicate with a nutty flavor and firm texture. Eaten raw, they're quite bitter but cooked make an excellent accompaniment to grilled meats and steak. Remove the very end of the stems and discard before cooking. Store in a paper bag in the fridge. All mushrooms are low in calories with no cholesterol and virtually no fat and very little sodium. They’re a good source of protein as well as riboflavin and niacin, B vitamins that are particularly important for people who don’t eat meat.
