Often mistaken as a cereal, intense, toasty, nutty buckwheat is actually a fruit seed (related to rhubarb) and almost triangular in shape. Rich in a variety of minerals, including manganese, magnesium and copper, and also a good source of B vitamins, buckwheat has very high levels of protein and is key to Japanese soba noodles, blinis, galettes and Polish kasha. Simply boiled, the groats will quickly expand, collapse and merge: to prevent this, simply coat with egg or oil then heat in a pan until dry. Gluten free. Certified organic by the China National Accreditation Service (CNAS).
