Extra sticky when cooked and sometimes eaten by hand, the unique texture of glutinous rice – better known as sticky rice – is due to the very small amount of amylose starch it contains. Requiring very little water to cook, since it breaks down easily, it's often soaked then steamed rather than boiled, and is used in Chinese cooking for both savory and sweet dishes or used to stuff dumplings. Belying its name, glutinous rice is actually gluten free. Certified organic by the China National Accreditation Service (CNAS).
