Much milder than black, white pepper adds a similarly accentuating, aromatic kick. Popular in light colored dishes like fish, white meat and mashed potatoes, it also pairs well with many Asian cuisines. Austrian family company Kotányi traces its history to 1881, when Janos Kotányi began operating his first paprika mill in his hometown of Szeged, Hungary (then a part of the Austro-Hungarian Empire).
