Smaller, younger, umami rich mushrooms with distinctively thick caps, most commonly eaten in stir-fries and stews. Baby shiitakes can be substituted in any recipe that calls for wild mushrooms and, unlike mature shiitakes, are entirely edible as their thin stalks remain tender when young. Store in a paper bag in the fridge. All mushrooms are low in calories with no cholesterol and virtually no fat and very little sodium. They’re a good source of protein as well as riboflavin and niacin, B vitamins that are particularly important for people who don’t eat meat.
