A part of the lily family (along with garlic and onion) leeks have a distinct flavor: quite harsh when raw, with hints of garlic (although only the youngest leeks are eaten like this) with a much more mellow flavor after cooking, with a mildly oniony taste and sweet notes. Generally only the white, thick stems are used: trim the leaves and base, cut into coins, wash well then steam, pan fry or add to soups and stews. Serve with white and cheese sauces. Leeks contain significant amounts of potassium (for heart health) and folate as well as being a source of dietary fiber and a range of vitamins, minerals and phytonutrients.
