Popular Chinese vegetable grown in Honghu Lake, Hubei, and a prized specialty of the region. Lotus root is perhaps best known for its distinctive appearance – several holes running through its center – and uniquely crunchy texture, similar to bamboo. High in fiber and rich in vitamins, potassium and copper, peel and simply boil whole or sliced then add to salads or dress as a side dish. Even candy by frying or baking slices in a sweet syrup, then allowing to cool.
