Long stemmed, slender mushrooms with tight caps, a mildly woody aroma and flavor, and a firm chewy texture, most commonly eaten in soups. A little like an enlarged enoki, also stir-fry with beans or add to stews. Store in a paper bag in the fridge. All mushrooms are low in calories with no cholesterol and virtually no fat and very little sodium. They’re a good source of protein as well as riboflavin and niacin, B vitamins that are particularly important for people who don’t eat meat.
