Like regular corn to look at, waxy corn – native to China – is more glutinous (containing more amylopectin), making it more digestible than regular corn. Less sweet than sweet corn and often used to help thicken foods, waxy corn has a unique, more pronounced corn taste and distinctively gummy texture. Cook as you would regular corn. Corn is a good source of carbohydrates and fiber as well as a range of vitamins and minerals.
