Made according to the mix of milks specified in the Iberico guideline – a minimum of 50% cow's, 30% goat's and 10% sheep's milk – cured Iberico has a hard texture and more pronounced, complex flavor, with hints of the characteristic grassy, herbal bite of all sheep’s milk cheese, given the higher percentage of butterfat compared to goat’s or cow’s milk. Pair with full bodied red wines, such as Rioja. Take out of the refrigerator and unwrap 15 minutes before consuming.
