Mixed red and yellow bell peppers, also called capsicums and a rich source of vitamin C. Lightly sweet and with a satisfying crunch, a red bell pepper is simply a ripe version of a green bell pepper. A yellow bell pepper is a special variety, specifically bred to have a sweeter, gentler flavor and is not just simply a growth stage in the process of green peppers turning red, as is often believed. Remove the bitter core, pith and seeds then roast, stuff, stir-fry or enjoy raw with salads and dips. To skin a bell pepper, simply char over an open flame or submerge in boiling water.
