Resembling a cucumber, bitter melon – also known as bitter gourd – has a pungent, sharp, astringent taste due to its high levels of quinine. But research suggest that it's very good for you, lowering blood sugar levels and with anti viral properties. Slice in half, spoon out the seeds then slice into half moons. Toss with salt and leave for 30 minutes to draw out liquid and some bitterness then steam or stir-fry, just like zucchini, perhaps paired with egg.
